Dr. Sonia SentellasDr. Sonia Sentellas, from the University of Barcelona, Spain, will join us this year to present a talk entitled “Ion Mobility–Mass Spectrometry in Food Analysis”.

Ion mobility spectrometry (IMS) has emerged as a powerful alternative to classical separation techniques. IMS has been extensively used in a wide range of research areas, however, until now, it has been scarcely applied in food analysis.

In this sense, the separation of polyphenols in food matrices based on their differential mobility opens excellent possibilities for food authentication.
