More and more researchers are dealing with the characterization of interactions of polyphenols with other food ingredients. In this ocasion, proteins are interesting, as they can interact (non-covalently), but als form (covalent) reactions products, highly depending on the interaction/reaction conditions, as well as on the initial properties of the polyphenols and the proteins. Cosequently, interaction and reaction products might affect technofunctional and physiological properties (of the corresponding foods) as well. One can even think of covalent polymeric reaction products that affect color, solubility and lead to unrevealed nutritional consequences. Overall, this is a bunch of complex challenges that need to be considered.
