Marine Polyphenols - Characterization and Applications

Monica jordheim1Prof. Monica Jordheim, University of Bergen, Norway will join the Polyphenols Applications 2023 congress to present a talk on "Marine Polyphenols - Characterization and Applications".

The world's population is projected to reach 9 billion by 2050, and utilization of bioresources will be increasingly important for food, feed, and health applications. Seaweeds, or macroalgae, are a sustainable biomass and they play an increasing role in aquaculture and marine bioresource development. However, they are still identified as an underexplored resource – and marine polyphenols are less explored compared to terrestrial polyphenols.

Prof. Jordheim will, in this presentation, discuss the importance of quantification and identification at the molecular level in order to uncover and understand the algae's potential in industrial applications. The experienced challenges in working with seaweed biomass compared to terrestrial biomass will be addressed, and results from industrial projects will be presented.

About Prof. Jordheim

Prof. Jordheim has over twenty years of experience in quantification and identification of polyphenols, including full molecular elucidation using NMR and HR-LC-MS. She has co-authored several book chapters on the chemistry of anthocyanins and identified more than twenty new structures from nature. The recent years Jordheim has focused on polyphenols from seagrasses and seaweeds including industrial collaborations and innovation projects. Prof. Jordheim is also the head of education at the Department of Chemistry at University of Bergen, Norway, and the leader of the larger research group Bioresources and Pharmaceutical Chemistry (BPC).
